Ingredients


  • Broccoli 1 bunch (chopped)
  • Butter ¼ cup
  • Onion ½ cup (chopped)
  • Flour 3 tbsp
  • Chicken stock 2 cups
  • Broccoli water 1 cup
  • Half and half 2 cups
  • Worcestershire sauce ½ tsp
  • Salt ½ tsp
  • Cheddar cheese 2 cups (grated)
  • Water as required

Cooking Directions

  1. Fill a large pot with water add broccoli, let it boil.
  2. Drain 1 cup of broccoli water (water in which broccoli boiled) in a cup.
  3. Mash broccoli with potato masher.
  4. In meanwhile heat butter in a pan. Stir fry onion until translucent. Add flour and whisk until combine nicely with melted butter.
  5. Pour chicken stock, let boil then add reserved broccoli water, half and half, Worcestershire sauce, and salt.
  6. Cook about 5 minutes until soup gets thick.
  7. Now add mashed broccoli and cheese. Stir and remove from heat.
  8. Serve hot.
