Recipe:
Ingredients
- Broccoli 1 bunch (chopped)
- Butter ¼ cup
- Onion ½ cup (chopped)
- Flour 3 tbsp
- Chicken stock 2 cups
- Broccoli water 1 cup
- Half and half 2 cups
- Worcestershire sauce ½ tsp
- Salt ½ tsp
- Cheddar cheese 2 cups (grated)
- Water as required
Cooking Directions
- Fill a large pot with water add broccoli, let it boil.
- Drain 1 cup of broccoli water (water in which broccoli boiled) in a cup.
- Mash broccoli with potato masher.
- In meanwhile heat butter in a pan. Stir fry onion until translucent. Add flour and whisk until combine nicely with melted butter.
- Pour chicken stock, let boil then add reserved broccoli water, half and half, Worcestershire sauce, and salt.
- Cook about 5 minutes until soup gets thick.
- Now add mashed broccoli and cheese. Stir and remove from heat.
- Serve hot.
